Jersey Girl, we’re iffy on waffles because it has been a crapshoot with finding a good batter recipe. Want to share yours? We have two different waffle makers that need a job. : )

The basic version is definitely what I’ll try first, but any fancier recipes that you’ve tried and like, I’ll also be happy to see.

Doing it now so I don't forget later. Busy today. :)

1. Belgian Waffle Maker Basic

1 C flour
1 tsp Baking Powder
1/2 tsp salt
1 tsp sugar
4 cup milk*
1 egg separated
1/2 TBSP melted butter

Sift dry ingredients together in bowl.
Add egg yolk and milk to dry ingredients, beat together
Beat egg white until stiff, stir 1/4 into batter to lighten it then gently fold in remaining egg white
Pour a scant cup of 1/2 batter into heated waffle mold.
Makes about 6 waffles.

*For some reason I made a note to use 2/3 c. milk and I don't recall why. I haven't made this recipe in quite some time so I can't say. I know that I always followed the exact instructions on this. They always turned out great! If you have children at home, I highly suggest surprising them with waffles and ice cream for breakfast before school on occasion! Children will love it, teachers well, who cares? ;)



2. Mini Waffle Maker Basic

1 C flour
1 TBSP sugar
2 tsp baking powder
1/4 tsp salt
1 egg
1 C milk
2 TBSP melted butter or vegetable oil

In a medium bowl, sift the flour, sugar, baking powder, and salt. Whisk the egg, milk and melted butter in separate bowl. Add wet ingredients to dry ingredients and mix until just incorporated. Grease waffle maker with butter or cooking spray. Pour 2 TBSP batter into the waffle maker and cook until golden brown.

* I skip the separate bowls and mix everything in one bowl. The amount of batter is enough (I think) to use this recipe in a regular size waffle iron. If not, you could just double it. These turned out great!

I can do fancier recipes later as I have time. I have one with whole wheat and other goodies. ;-)

Yes let me know how they turn out for you. Everyone has different preferences for taste and texture so who knows? I really love the little mini waffle iron! You can turn out quite a lot of waffles in one recipe and the iron itself doesn't take up much space. The Dash company also makes other shapes of these. I ordered mine from Target.com but they're everywhere even on Amazon.
