Why do Mormon's have Sunday as their Sabbath?

It is true the traditional Sabbath changed with the Christians and is affirmed in LDS doctrine. However, it is also true that what the actual day of the week it is does not matter as long as we all do it together.
Let no man therefore judge you in meat, or in drink, or in respect of an holyday, or of the new moon, or of the sabbath days:
Colossians 2:16
And the church did meet together oft, to fast and to pray, and to speak one with another concerning the welfare of their souls.
Moroni 6:5
We happen to do it the same as traditional Christianity. No biggie.

Doesn't matter if it is Saturday or Sunday. Judged by the number of businesses and stores I observed open on Saturdays and Sundays when I last visited SLC, Logan and Provo, as well as how well the parking lots were filled on those days, Mormons don't have a sabbath.

It has to be a Sunday because the Mall trades on the other six days...

The early Christians called it the Lord's Day, not the Sabbath. We got the Sunday Sabbath from Babylon (ie American protestant churches).

No. The early Christians observed the Lord's Day. It was not a sabbath (rest) day. It was sometimes referred to as the Eighth Day.
If you went to one of those meetings you would not recognize it. It would not be like an LDS meeting. No primary, no Relief Society, no YM/YW, no deacons passing out tiny bread crumbs and thimbles of water...no correlation committee.

The Bible refers to them meeting on the first day of the week! Can you give some references for some of the thins you are stating?

Also, As I previously stated, by definition, the a Sabbath day is a day that is set aside for worship! If you have a reference that states otherwise, please show it.

Worship does not mean "rest." Can we agree on that?
Here is one example of the usage of the eighth day, from The Epistle of Barnabas:
Ye perceive how He speaks: Your present Sabbaths are not acceptable to Me, but that is which I have made, [namely this,] when, giving rest to all things, I shall make a beginning of the eighth day, that is, a beginning of another world. Wherefore, also, we keep the eighth day with joyfulness, the day also on which Jesus rose again from the dead. And when He had manifested Himself, He ascended into the heavens.
And here we have Ignatius talking about giving up the sabbath in favor of the Lord's Day:
We have seen how former adherents of the ancient customs have since attained to a new hope; so that they have given up keeping the sabbath, and now order their lives by the Lord's Day instead (the day when life first dawned for us, thanks to Him and His death.)
There are more references by the early church fathers to the Lord's Day being the eighth day. Maybe you could use Google demi-god to find them.
