That’s not been my experience. I think that folks who leave often do develop a view of God and Jesus that doesn’t align with the seemingly quirky view that Mormonism dictates—but that’s not the same as leaving them behind. The Mormon conceptions of God are alien and strange to many other faith traditions. It’s often difficult to understand that while you’re ensconced in the LDS faith.

It might well be true that no-one who had understood Aquinas and Plantinga and all would have been talked out of faith in God or Jesus by the CES Letter. I don’t remember the CES Letter saying anything about God or Jesus. I thought it was all about uniquely Mormon issues. So maybe someone whose only understanding of Christianity or theism came from Mormonism would have rejected them all based on the CES Letter, but anyone with much exposure to mainstream Christian apologetics would at least understand that the CES Letter wasn’t challenging God or Jesus, just Mormonism.
People can also thoroughly understand all the Christian apologists without being convinced by them. They just don’t owe their lack of faith in God or Jesus to the CES Letter. Their disbelief in them is unrelated to it.

I would still maintain, that those that leave the church and lose their faith in God and become atheistic may have never had that connection with God and Jesus in the first place. Why? Because it is that connection that supersedes everything else.
