I wouldn't expect the church would follow EVERYTHING society does. Sister Dennis makes some obviously untrue statements in an attempt to convince (herself?) that she’s important in the Church. She isn’t. She’s window dressing. She’s a PR front for the men in charge, whether Dennis realises it or not. She’s exacerbating the problem, and delaying the solution, by seeking to falsely portray the Church as a place of equality.

When you dig into that statement, you can really see the isolation Mormon women operate under. My guess is a man with authority over her (ie, any of them) told her to say that, and as an obedient Mormon women, she did.
